Slavonski burgeri (Country Burgers)

Pikantni burgeri inspirirani okusima Slavonije sadrže komadiće domaće kobasice i dimljenog sira, u domaćim aromatičnim pecivima od mladog luka, s ajvarom, kiselom paprikom i kiselim krastavcima.






Slavonski burgeri (za 3 osobe)
Peciva
1 žlicamaslinova ulja
1veliki mladi luk (cijeli)
300 g brašna
6 gsuhog kvasca
100 ml toplog mlijeka
50 mltople vode
1/2 žličice soli
1/2 žličicešećera
+4 žlice mlijeka za premazivanje, 1 žlica sezama za posipanje

300 gmljevene junetine
50 gslavonske kobase nasjeckane na kockice 5 – 10 mm
50 gdimljenog tvrdog sira nasjeckanog na kockice 5- 10 mm
1 žličicasenfa
1/4 žličicesoli
svježe mljeveni papar
Za poslu-živanjeajvar, kisela paprika, kiseli krastavci
Na žlici maslinova ulja (ok, ovo nije autohtono :) upotrijebite svinjsku mast ako imate :)) kratko propirjajte na kolutiće narezan luk (i zeleni dio). Ostavite da se hladi dok zamijesite tijesto. Blago zagrijte mlijeko, te u njega dodajte kvasac i šećer. Pustite neka odreagira 10-ak minuta. U posudu stavite brašno i sol, te ulijte smjesu mlijeka i kvasca. Mijestite tijesto dodavajući vodu. Na kraju dodajte luk te zamijesite glatko tijesto. Ostavite prekriveno krpom na toplom mjestu oko sat vremena da udvostruči obujam.

burger-peciva Kad se tijesto diglo, zagrijte pećnicu na 180°C. Podijelite tijesto na 6 loptica i poredajte na papirom za pečenje obložen pleh. Premažite s malo mlijeka i pospite sezamom. Pecite 20-ak minuta. Gotova peciva izvadite iz pećnice i prekrijte dvjema krpama kako bi se izbjeglo naglo sušenje i korica postala mekana. Ako vam se učini da pecivo nije dovoljno pečeno, ne brinite, prerezana peciva još će se prepržiti na masnoći od burgera na grill-tavi.

Stavite sve sastojke za burgere u zdjelu i dobro promiješajte. Podijelite na 6 loptica. Svaku lopticu spljoštite i oblikujte tanku pljeskavicu. Pljeskavice pecite na malo ulja na grill-tavi, ovisno o željenoj jačini pečenja.

burgeri-priprema Kad su burgeri gotovi, na ostacima masnoće kratko popecite prerezane polovice peciva.
Donju polovicu peciva obilato namažite ajvarom, poslažite kiselu papriku i krastavce te na vrh svega meso. Prema želji poklopite ili poslužite otklopljene.

Country Burgers (serves 3)
Bread Rolls
1 tbspolive oil
1large stalk spring onion
300 g flour
6 gdry yeast
100 ml warm milk
50 mlwarm water
1/2 tsp salt
1/2 tspsugar
+4 tbsp milk, 1 tbsp sesame seeds

300 gground beef
50 gdomestic smoked Slavonian sausage (substitute: pepperoni (hot)) sliced into small cubes (5 – 10 mm)
50 gsmoked cheese sliced into small cubes (5 – 10 mm)
1 tspmustard
1/4 tspsalt
freshly ground pepper
To serveajvar, pickled bell peppers, pickled cucumbers
Heat 1 tablespoon of olive oil and then saute sliced spring onion (with leaves) until soft. Remove from fire and leave to cool until you prepare the dough. Heat the milk (just a little above body temperature), pour in sugar and yeast and let sit for 10 minutes (to activate the yeast). In a large bowl combine flour and salt, and then add milk and yeast mixture. Knead the dough adding warm water. Add onions and mix the dough with hands until dough is stiff enough to leave side of bowl. Cover the dough with a clean, damp cloth and let rise until doubled in bulk.

Preheat oven to 180°C. Line baking sheet with parchment paper.

Divide raised dough in 6 balls. Place the balls on the baking sheets and brush them with milk. Sprinkle them with sesame. Bake for 20 minutes. When done, put the baking sheet out of the oven and cover with two clean, damp clothes so the rolls don’t dry and the crust becomes soft. If you feel like the rolls aren’t baked enough, don’t worry, you will cut them into half and grill them on the grill pan for a minute.

Combine ingredients for burgers in a bowl, scrunch and mix everything up well. Divide into 6 pieces and pat and mold each piece into a roundish shape. Brush them with oil. Preheat a grill pan. Place the burgers on grill pan and cook to your liking for 3 or 4 minutes on each side.

Cut bread rolls in half and grill each half on the grill pan on the remaining grease.

Top the bottom halves with ajvar, pickled bell peppers and pickled cucumbers. Put the burgers on top. Put other halves on top of the burgers, or you can serve them aside.
