
Bob je jedna od onih namirnica koju je totalna gnjavaža čistiti, ali okus, mekoća i duljina kuhanja nadoknađuju muke

Umak od rajčice | |
1 žlica | maslinovog ulja |
2 | češnja češnjaka |
400 g | pelata |
50 ml | vina |
prstohvat | suhog bosiljka, timijana |
1 žličica | smeđeg šećera |
sol, papar | |
Bob | |
500 g | mahuna boba (ili 250 – 300 g očišćenog od mahuna) |
posluživanje | ribani sir Grana Padano ili slično |

Upute:
Na zagrijanom maslinovom ulju vrlo kratko popržite nasjeckani češnjak, potom dodajte grubo narezane pelate. Posolite i pirjajte na srednjoj vatri oko 45 minuta. Pred kraj dodajte timijan, bosiljak, papar. Ako je umak pre kiseo, dodajte i šećer.
Dok se umak kuha, odvojite zrnje boba iz mahuna. Zrnje stavite u kipuću vodu i kuhajte 10 minuta. Potom ga stavite u hladnu vodu da se ohladi. Ohlađenom zrnju očistite opnu (ja to radim tako da dok držim zrno noktom napravim rez s jedne strane zrna, a drugom rukom istisnem zrno kroz taj rez). Kad je umak gotov, umiješajte bob i prokuhajte još minutu.
Poslužite s kuhanim špagetama. Pospite ribanim sirom Grana Padano ili sličnim.
Ukoliko jelo spremate nekom velikom mesoljupcu, u umak na kraju možete dodati preprženu slaninu, kobasicu, pršut…

Fava beans are one of those ingredients that are pain in the neck to prepare for cooking! But once this is done, they give you so much pleasure enjoying soft, tasty beans after only several minutes of cooking. I wanted to prepare this dish with fresh tomatoes, the season has just begun! And then I tasted one, it was rich in smell and taste, so delicious. And then I tasted another one. And then I sliced even more in the evening. And then – they were all gone What the heck, pelati did the job with this dish just fine as well
(Serves 3)
Tomato Sauce | |
1 tbsp | olive oil |
2 | garlic cloves |
400 g | pelati (canned peeled tomatoes) |
50 ml | wine |
pinch | dried basil, thyme |
1 tsp | brown sugar |
salt, pepper | |
Fava Beans | |
500 g | fava beans in pods (or 250 – 300 g pure beans) |
To serve | grated Grana Padano cheese |
Spaghetti | |
water, salt |
Directions:
Heat olive oil in medium pot and then add finely chopped garlic. Fry stirring for about 15 seconds and then add roughly chopped tomatos. Add salt and simmer on medium heat for about 45 minutes. (Meanwhile prepare the beans.) Few minutes before the end add thyme, basil and pepper. If the sauce is too sour, add one tsp of brown sugar.
Remove the beans from the pods. Put the pods in boiling water and cook for 10 minutes. Put cooked beans in cold water to cool. Let the beans cool, then peel the outer skin from each of them. See below a video that shows how to peel the beans (starts at 1:38).
When the sauce is done, add peeled beans and bring to boil just to warm the beans.
Serve with cooked spaghetti. Sprinkle with grated Grana Padano cheese or similar.
If you want to make this dish more appealing to a person who is a great meat-lover, you can add to sauce fried pancetta, sausage or prosciutto.
