Zobeni keksi sa suhim voćem (Oat cookies with dried fruit)

Kod nas u kući nitko baš nije ljubitelj zobenih, niti drugih pahuljica u mlijeku. Zato ih volimo u kolačima i pecivima. Recept je iz doba kad sam malo više eksperimentirala omjerima, pa se ova verzija keksića održala i keksići su već nekoliko godina često prisutni kao međuobrok ili doručak “to go”.


 
Zobeni keksi sa suhim voćem
150 gmaslaca
150 gsmeđeg šećera ili muscovado
1 žličicaekstrakta vanilije
2 žlicemeda
150 gintegralnog brašna
100 goštrog brašna
150 gzobenih pahuljica
1/3 žličicesoli
1 žličicacimeta u prahu
1 žličicasode bikarbone
150 gsuhog voća (smokve, šljive, brusnice, marelice)
2manja jaja

Upute:
Pjenasto izmiješajte maslac sa šećerom. Dodajte med i ekstrakt vanilije. U drugoj zdjeli pomiješajte brašna, sodu bikarbonu, sol, cimet, zobene pahuljice te sitno nasjeckano suho voće. Umiješajte maslac sa šećerom u brašno, i na kraju 2 dobro izmućena jaja. Grabite žličicom i oblikujte kuglice rukama te ih spljoštite na papiru za pečenje s razmakom od 4-5 cm. Pecite na 180°C oko 6-7 minuta (odnosno dok ne počnu tamniti).

Kad se keksići izvade iz pećnice, jako su mekani (nemojte misliti da nisu gotovi). Keksići se hlađenjem osuše i očvrsnu!

My family is not fan of oat or any other flakes in milk. But we love them in cookies and pastry. This recipe is from the time when I experimented more with ingredient ratios, and I kept this version as a final. I bake these cookies often, and we eat them as a snack between meals or as a breakfast “to go”.

Oatmeal cookies with dried fruit
150 gbutter
150 gbrown sugar (or Muscovado)
1 tspvanilla extract
2 tbsphoney
150 gwhole wheat flour
100 gall purpose flour
150 goat flakes
1/3 tspsalt
1 tspcinnamon powder
1 tspbaking soda
150 gdried fruit (figs, prunes, cranberries, apricots)
2small eggs

Directions:
Cream butter and sugar together. When well blended, add vanilla extract and honey. In another bowl mix flours, baking soda, salt, cinnamon powder, oat flakes and chopped dried fruit. Add butter and sugar mixture to the flour mixture, add eggs and mix well by hand. Grab the cookie dough using spoon and shape balls by hands. Drop the balls onto a parchment-lined baking sheet, flatten them into a cookie shape. They should be 3-4 cm apart. Bake for 6-7 minutes or until edges are light golden brown.

When taken straightly out of the oven, cookies are soft (not underbaked). Cookies get firmer and drier when they start to cool.
